Vinification (Wine-making)

Method: vinification in red, maceration in steel tanks at a controlled temperature with frequent pumping over for roughly 9 days, during which 2-3 daily pump-overs and 1 delestage are carried out.

After racking, the wine is decanted a couple of times to eliminate the residue precipitated during the transferring process.

Malolactic fermentation is then carried out in wood followed by 10 months refining.

After bottling, the wine ages in the bottles for roughly 3 months.
