Vinification (Wine-making)

Method: vinification in red, maceration in steel tanks at a controlled temperature with frequent pumping over for 7 days.

During this period, 2-3 daily pump-overs and 1-2 delestage are carried out.

After racking, the wine is decanted a couple of times to eliminate the residues precipitated during the transferring process.

Spontaneous malolactic fermentation in steel then follows, after which the wine ages another 7-8 months before it is bottled.
